I love the .NET Console app. I use them quite regularly, primarily for scheduled apps which need to run every night at 1:17AM. Last week I wrote a monitoring and notification app to email individuals on a 30-day interval of an item date anniversary, and this week I wrote an app to migrate ACT! contact management data to SQL Server. Typical console architecture that I've found I use a lot is a barebones .EXE component calling Web Services asynchronously, where most of the action takes place.
